Rhubarb

The last rhubarb harvest!

Last year, we had a mixed season for the rhubarb. The dry spring really affected its growth early in the season which resulted in less rhubarb to harvest. However, like a horse in a race, they shot back at the last leg to give a very good crop in July, mainly due to the wet and fairly cold weather.

I froze this crop of rhubarb ready to use in the winter but left the remaining plants in the ground to strengthen ready for next season. When harvesting rhubart, remember to leave at least two legs of rhubarb to help the plant photosynthesize so that the Risom/roots can gain their strength once again.
